Sunflowers are well-known throughout the nation for their tall stature and their large yellow blooms, some of which can grow to be as large as a person's head. The vibrant yellow blossoms stand out for many reasons, and beauty isn't the main one. They are used for decoration and the seeds are a source of food - sunflower butter, made from sunflower seeds, is often used as a substitute for peanut butter.

Sunflowers are native to the Americas and were domesticated as early as 2600 BC in areas of Mexico. The flowers symbolized the sun gods in the Aztec and Inca tribes and were thought to be very important in all aspects of life. Spanish explorers also loved the look of the bold blooms and took bunches of them back to their homelands to domesticate them there.

Sunflowers are so named not because they look like the sun, but because their heads always tilt to face the sun. So sunflowers are heliotropic. Young sunflowers slowly turn throughout the day to face the sun as it goes from East to West. If a person takes a sunflower plant and turns it 180 degrees so it is facing the West, it will continue to turn in the same direction until it adjusts to its new rotation.

A sunflower actually consists of a bunch of small flowers, or florets that are crowded together in the center. Sunflowers are categorized as composite flowers, meaning the florets are arranged in a spiral pattern, all in a 137 degree angle.
